Medoliva PLUS-1 is a natural extract of olive fruit polyphenols and vinegar,encapsulated in maltodextrin or other similar food-grade carrier, via freeze-drying. Only pure water and no heating is used for its extraction and drying, so it is a totally green process without use of chemical solvents, which ensures optimal bio functionality and high antioxidant and antimicrobial activity. The product contains natural hydrotyrosol, tyrosol, caffeic acid, p-coumaric acid, anthocyanes, catechins and natural antioxidant olive polysaccharides. The micro encapsulation of the freeze-dried product provides significant flavor and color reduction, resistance to high temperature, and gradual release of polyphenols.

APPLICATIONS-ACTIVITY

It is a 100% natural Antioxidant that prevents lipids and color oxidation,it is Antimicrobial with a high and wide spectrum of antibacterial and antifungal activity. Contributes to red color formation in pasteurized sausages and gives a better-richer flavor.

It can be used in Pasteurized sausages for its antioxidant and especially antimicrobial activity against both bacteria and fungi. It can replace synthetic additives such as nitrites and ascorbate-erythorbate.

Also in Ready-to-eat (cooked and refrigerated) food and meals (sous-vide) is used forits antioxidant and especially antimicrobial activity against both bacteria and fungi.
